SOIL: ponca (eocenic marl).

BREEDING SYSTEM: Guyot.
HARVEST: manually, in boxes, at the end of September.
WINEMAKING: delicate stripping of the grapes, temperature-controlled fermentation on the skins for 10 days. A delicate pressing is carried out in order to separate the must from the grapes' skin. The fermentation takes place in stainless steel tanks and it is followed by a refinement of 6 months. Then, after many decantings, the wine is bottled. The aging process is complete after 2 months in the bottles.
COLOUR: ruby red with purplish highlights.
AROMA: scents of wild plants.
TASTE: rich with tannins.
AGING POTENTIAL: 4/5 years.
SERVING SUGGESTIONS: perfect with red meat, game and medium-aged cheeses.
