GRAPE VARIETY: Merlot 100%.
CLASSIFICATION: DOC - Colli Orientali del Friuli.
SOIL: ponca (eocenic marl).
AGE OF VINES: 15/20 years old.
BREEDING SYSTEM: double Guyot.
HARVEST: manually, in boxes, during the third week of October.
WINEMAKING: delicate stripping of the grapes, fermentation on the skins for 10 days. Then a delicate pressing is carried out in order to separate the must from the grapes' skin. The fermentation takes place in stainless steel tanks and it is followed by a refinement of 6 months. Then, after many decantings, the wine is bottled. The aging process is complete after 4 months in the bottles.
COLOUR: ruby red with purplish hues.
AROMA: hints of black pepper, wild berries and cloves.
TASTE: light sensation of black pepper and wild berries.
AGING POTENTIAL: 2/3 years.
SERVING SUGGESTIONS: excellent with red meat, game and aged cheeses.
SERVING TEMPERATURE: 64°F.
