SOIL: ponca (eocenic marl).
AGE OF VINES: 15/20 years old.
BREEDING SYSTEM: Guyot.
HARVEST: manually, in boxes, at the end of August.
WINEMAKING: soft pressing of the grapes without maceration. The re-fermentation, which is necessary for sparkling wines, takes place sur lies in stainless steel tanks, fully refrigerated, for about 2 months. Bottling is followed by a short aging in the bottle.
COLOUR: bright straw-yellow.
AROMA: elegant, with scents of fruits.
TASTE: dry, fresh and aromatic.
AGING POTENTIAL: 1 year.
SERVING SUGGESTIONS: excellent as an appetizer, perfect with cold cuts, cheeses, fish and vegetables.
SERVING TEMPERATURE: between 44°F and 48°F.
