AGE OF VINES: 15/20 years old.
BREEDING SYSTEM: Guyot.
HARVEST: manually, in boxes, in September.
WINEMAKING: delicate stripping of the grapes, temperature-controlled fermentation on the skins for 8/10 hours. A delicate pressing is carried out in order to separate the must from the grapes' skin. The fermentation takes place in stainless steel tanks and it is followed by a refinement of 6 months. Then, after many decantings, the wine is bottled. The aging process is complete after 3 more months in the bottles.
COLOUR: straw yellow with greenish reflections.
AROMA: scents of exotic fruits, pepper and tomato leaf.
TASTE: dry, fresh and mineral.
AGING POTENTIAL: 2/3 years
SERVING SUGGESTIONS: excellent with vegetables and fish.
