SOIL: ponca (eocenic marl).

HARVEST: manually, in boxes, in September.
WINEMAKING: delicate stripping of the grapes, fermentation on the skins for 8/10 hours. Then a delicate pressing is carried out in order to separate the must from the grapes' skin. The fermentation takes place in stainless steel tanks and it is followed by a refinement of 6 months. Then, after many decantings, the wine is bottled. The aging process is complete after 2 more months in the bottles.
COLOUR: straw yellow with greenish hues.
AROMA: scents of pepper, tomato leaf and exotic fruits.
TASTE: dry, aromatic and mineral.
AGING POTENTIAL: 2/3 years.
SERVING SUGGESTIONS: very well with vegetable dishes and fish.
SERVING TEMPERATURE: 53°F.
