GRAPE VARIETY: 90% Schioppettino, 10% Pinot Nero.
CLASSIFICATION: DOC - Colli Orientali del Friuli.
SOIL: ponca (eoceanic marl).
AGE OF VINES: 15 years.
BREEDING SYSTEM: Double Guyot.
HARVEST: manually, in boxes, at the end of September.
WINEMAKING: a soft pressing is carried out, then the must is put in the autoclave in order to start the fermentation. This is followed by an increase of the pressure to make it sparkling wine. The temperatures of the entire process are extremely low in order to give the best fruity scents to the wine. A filtration and an isobaric bottling end the process.
COLOUR: dark pink with peachy hues.
AROMA: fruity and fresh, with strawberries and pineapple scents.
TASTE: dry and clean, fresh and fruity.
SERVING TEMPERATURE: 40°-42° F.
SERVING SUGGESTIONS: excellent as an aperitiv, with fish, medium aged/aged cheeses and white meat.
